This saffron is produced on a parcel of Herbolaria, which straddles the communes of La Rippe (CH) and Divonne (F). From artisanal production without input, harvested by hand and dried with care.
This spice is used in many recipes in different countries (Risotto/ Soups/ Confectionery). It is important to soak the pistils in a hot liquid (water, cream) and add them to the dish at the end of cooking. It is possible to cut or crush the pistils before soaking.
There are about 150 pistils in a 0.3 gr pot and the recommendation of 8 to 10 filaments per person is commonly accepted for delicate dishes (risotto, sauces, fish).
Tip: for risottos, use water instead of broth for cooking.
